Smokehouse Grille & Wingery has just opened in Boca Raton, taking over the former location of the long-running Boca Wings & Ribs on N. Federal Highway. Co-Proprietors Erik Frasco and Mark Uffer traveled 3,600 miles to Missouri to seek out the custom-made hardwood smoker responsible for the establishment’s authentic smoked barbecue selections.
“Authentic smoked barbecue is the result of more than just a traditional oven or char grill,” explains Chef Uffer. “We smoke our meats over hickory and oak logs, creating natural, hardwood flavors. Our fresh, never-frozen ingredients and slow cooking process ensure the highest quality barbecue, making us the only local authentic smokehouse in Boca Raton.” Having tasted the product (and being a true barbecue aficionado), I can personally attest to Chef Mark’s claim – this is the REAL stuff! One glance at the telltale “bark” and visible smoke ring, and distinctive flavor will put a smoky smile on any BBQ lover’s face…
Smokehouse’s one-of-a-kind barbecue process (which can slow-cook up to 2,000 pounds of meat at one time!) provides unique character, depth and genuine smoked flavor to its menu items. The extensive assortment includes smoked ribs, brisket, chicken, wings, sausages, and pork. With many meats smoked between 2 and 27 hours, the final products are fall-off-the-bone sensations, tender and flavorful and cooked to perfection. Smokehouse’s proprietary “Magic Dust” seasoning is a secret blend of 19 spices gently rubbed on all of the meats before the long and slow smoking process over a hardwood fire begins.
But beyond the barbecue itself, the GRILLED items also excel, fired over that same hickory and oak wood! Just about everything coming from Chef Mark’s kitchen was exceptional, but particularly outstanding specialties include the fire-grilled Smokehouse Strip Steak (served with stuffed Poblano), “Pepper Fever Burger” topped with Roasted Poblano Pepper Relish, Panko-Crusted Grouper served with a Chipotle Aioli, and about the best Pork Rib Chop (also wood-fired) we’ve ever tasted.
