Everyone loves Russet potatoes aka Idaho potatoes and there is a never ending way to prepare these potatoes. For more information check out: Produce Oasis
These tasty potatoes can be baked during the preparation of your entrée of chicken, beef, pork or fish.
Herbed Baked Potatoes
2 large Russet baking potatoes (scrubbed)
1/4 c. Parmesan cheese (shredded or grated)
1 tsp. dried basil leaves (crumbled)
1/4 tsp. salt
1/4 tsp. black pepper
2 tsp. lemon juice
2 tsp. butter (melted)
Mix together Parmesan cheese, basil, salt and pepper. Halve potatoes lengthwise. Brush cut surface with lemon and then butter; then sprinkle cheese mixture on potatoes.
Place potatoes cut side up in baking dish, cover with aluminum foil and bake for 30 minutes. Remove foil and continue baking until potatoes are tender and starting to brown.
Suggestion: Herbed Baked Potatoes would go well with meatloaf.
