If you are like me and only like your baked goods fresh, then this is a great recipe for you. I have stored these in the freezer without any freshness issues for a couple months. It takes a little work to prepare them but once you’re done and have them stockpiled in the freezer…you can have mini apple turnovers in just 15 minutes, any time you wish. They are also great to have as a last minute dessert for unexpected company or party invite.

1 apple (red, green, whatever you have in the house) – small to medium dice
1 tsp brown sugar
1 tbsp butter
cinnamon to sprinkle over apples
1 sheet of puff pastry
Tools for the job:
small frying pan
2 pieces of parchment paper (for under puff pastry and cookie sheet)
small cook sheet(1/4 tray)
Place diced apples and butter in a small frying pan over a medium heat stir around until butter is melted. Sprinkle cinnamon and 1 tsp of brown sugar over apples. Cook for about 3-5 minutes stirring occasionally. Place in an open container and put in fridge. Defrost a piece of puff pastry, make sure it is nice and plyable, do not rush this as you may crack the pastry. * With a rolling pin gently roll the pastry out in all directions, not too much (see slideshow). With a knife cut the pastry in a 4 x 4 grid giving you 16 squares. Brush all 4 edges of each square with the egg wash. Spoon your apple mixture into the center of each square. Fold each square into a triangle, take a fork and press the edges down (not too hard you just want to seal the sides up), trim any excess ugly (it happens) and place on a cookie sheet. When you have completed all of the turnovers, brush with egg wash, sprinkle with sugar and put the cookie sheet into the freezer uncovered for about 30-45 mins. Preheat oven to 375 degrees. When mini turnovers are frozen, poke 3 holes in top (see slideshow) then you can either put them straight in oven to eat or take out a couple and put the rest into a freezer bag and back into the freezer (for future yumminess).
Place the desired amount of turnovers in oven for approx. 15 mins.
Easy icing: (made for 4 mini turnovers)
2 tbsp powdered sugar
1 tsp water
Mix ingredients and place into sandwich bag. Snip the corner of the bag off and apply icing to the turnovers.
*If you do crack the pastry carefully mend the cracked parts with a dab of water on the tip of your finger.
