Chicken and noodles is one of those old fashioned casseroles that warms you from the inside out. Everyone probably has a favorite recipe for this homey, comforting casserole. In this recipe, the chicken and noodles are baked in a cheese sauce made with sharp cheddar for extra cheesy flavor.
The cheese sauce, also known as a mornay sauce, is easy to make. If you have ever made homemade macaroni and cheese, you have made a mornay sauce. It is simply a white sauce with cheese added.
Cheesy Chicken and Noodles
- 1 1/2 pounds chicken breast halves
- 4 oz. wide egg noodles
- 1/2 cup butter, divided
- 1 onion, chopped
- 1/2 cup chopped celery
- 1 small green bell pepper, seeded and chopped
- 1 clove garlic, minced
- 1/4 cup plus 2 tablespoons flour
- 3 cups whole milk
- 2 cups sharp cheddar cheese
- 1 sleeve Ritz crackers, crushed
Preheat oven to 350. Lightly grease a 13×9 inch baking dish.
Place chicken in a Dutch oven or other large pot; add water to cover. Bring to a boil; reduce heat and cover. Boil for 20 minutes. Remove chicken to a plate to cool, reserving broth. Once chicken is cool, chop into bite size pieces.
Return reserved broth to a boil; add noodles and cook for 5 minutes. Drain and set aside.
Wipe out Dutch oven and melt 1/4 cup butter. Add the onion, celery, bell pepper, and garlic. Sauté over medium heat until onion is translucent and other veggies are tender, about 3-5 minutes. Remove vegetables to a small bowl and wipe out pot again.
Melt remaining 1/4 cup butter in pot and add flour. Whisk together over medium heat for a minute or two. Add milk and whisk until mixture is smooth. Continue cooking and whisking over medium heat until mixture becomes thickened and bubbly. Add cheese and whisk until smooth. Season to taste with salt and pepper.
Add vegetables, noodles and chopped chicken to the sauce. Pour into prepared baking dish. Sprinkle evenly with crushed cracker crumbs. Bake for30 minutes or until heated through and bubbly.
Makes 6-8 servings
