Autumn is almost here, finally (September 23) . . .which means school is back in session and family life is busy with work, kid’s activities and sports which means being on the go.
Casseroles are a quick fix for a good, home cooked dinner. Some casserole recipes can be made in the crock pot, or prepared the night before and then baked in the oven when arriving home. All you need is a salad or a hot vegetable and hot rolls to make a complete meal.
Saucy Hamburger Noodle Casserole
1 – 8 oz. package noodles
1 lb. lean ground beef
1 medium size onion (diced)
1/2 green bell pepper (diced) (optional)
1/4 tsp. oregano
1 tsp. chili powder
1/2 tsp. garlic powder
1/4 tsp. black pepper
1 can tomato soup
1 can cream of mushroom soup
2 c. cheddar cheese (shredded)
Cook noodles per direction on package, drain. Place noodles in 9” x 13” casserole dish.
Brown ground beef, add onions and green peppers, cook until they are tender. Add soups and seasonings. Pour beef mixture over noodles and lightly stir. Sprinkle cheese over top. Bake at 350 degrees for 20-30 minutes until bubbly and cheese is melted.
Tip: My favorite dried noodles are the No Yolks brand. They are a light and cook quickly.
